Paula Deen Pumpkin Gooey Butter Cake (feat. Rachel Ray)

 Cake:
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg

Preheat oven to 350 degrees F.

Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan. To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey. Serve with fresh whipped cream.

Variations: For a Pineapple Gooey Cake: Instead of the pumpkin, add a drained 20-ounce can of crushed pineapple to the cream cheese filling. Proceed as directed above. For a Banana Gooey Cake: Prepare cream cheese filling as directed, beating in 2 ripe bananas instead of the pumpkin. Proceed as directed above. For a Peanut Butter Gooey Cake: Use a chocolate cake mix. Add 1 cup creamy peanut butter to the cream cheese filling instead of the pumpkin. Proceed as directed above.

Patti Novak – Match Maker,

Her Show is called Confessions of a Matchmaker and she tells it like it is.  She will be featured on Oprah Jan 31, 2008 to promote her new reality series.  Matchmaking has been around for hundreds of years.  I can even admit to hooking up several couples throughout my lifetime.  Many cultures still use this approach of finding love usually to keep their wealth – wealthy or to please their families.  Patti takes matchmaking to a new level.  She follows up with clients and even polishes them up before the go out into the dating world.

Dine Out Vancouver 2008- The Observatory (Grouse Mountain)

My husband and I decided to try The Observatory Restaurant for Dine Out Vancouver 2008.  I have to say, I highly recommend this venue for the Dine Out experience.  Because The Observatory is located at the top of Grouse Mountain, patrons may feel hesitant to go because they would have to pay for the lift.  But, during Dine Out, the restaurant creates a package for its valued customers.  The $35 Value includes: The 3 course Dine Out Menu, the lift up the mountain, tickets to the ice rink, sleigh rides and the Grouse Mountain’s Theater in the Sky.  I’d rather get all this than a $25 dish with 1 asparagus over a tbsp of mashed potatoes… I’ll post about that experience later.  Here’s the menu.  I rate this restaurant 5 BIG STARS!!!!!   

Appetizer:

Salad of Poached Bosc Pear and Roquefort
organic winter greens, candied pecans, pear walnut vinaigrette

or

Cream of Shallot Soup
pancetta
Chantilly, orange vincotto
  

Entrée:

Roast Loin of Pork spiced pear & parsnip puree, apple grape chutney, sage jus

or

Sea Scallops
butternut squash risotto, carrot blood orange emulsion, vegetable ribbons

Where did that come from?

Sitting down in front of a mirror is not a fun experience for me.  I saw….. back fat!  Back fat? Yes, back fat.  I’ll often pinch it and let out a big sigh.  If only there was a way to transfer the fat in my body to places like my hallow chest or my slowly-getting-flat ass.  If only I had that ability.  Sure, I should start working out and eating right. But, the thought of putting on my runners for a purpose just doesn’t make sense anymore.   I try to stand a little more straight… and still there!  I try to suck in my gut… and still there!!!!  I try to hide it under my bra and guess what… still there!  I don’t mind having a gut, but back fat? Why? Where did that come from? Had someone told me 10 years ago that I’d gain a whole bunch of weight I would have dressed a little sluttier.  Rather, I wore everything baggy and if it wasn’t baggy it was boring.  Dressing like a hoochy is not an option right now.  People may run away or hurt their eyes, or run away… faster.I’ll accept it. I’ll pinch it and smile.

Angelina Jolie pregnant with twins!!!

I swear there’s something in their vitamin water!!! What is with all these celebrities having twins?  There were speculations of her pregnancy during the Critic’s Choice Awards.  She was said to be quite “healthy” than usual.  A source than told Star magazine that Angelina admitted to be eating for three!!!  I have a two year old and I’m trying for a second… maybe I’ll have twins too?

Recipe: Paula Deen’s Krispy Kreme Bread Pudding with Butter Rum Sauce

Just when you thought you had the best bread pudding of your life… think again.  After watching a re-run of Ellen I had to try this incredibly calorie high dessert made by Ms. Paula Deen.  This isn’t her own creation, rather she used Bill Nicholson’s recipe for the show.  Now, anything to do with doughnuts is fabulous… but you take it to the next level when you use the oh-so addictive Krispy Kreme.  Mine didn’t turn out exactly like the picture since I completely drained the fruit cocktail (wasn’t supposed to).  Anyway, it was tasty and everyone at my dinner party loved it!

Krispy Kreme Bread Pudding with Butter Rum Sauce2 dozen Krispy Kreme donuts
1 (14-ounce) can sweetened condensed milk (not evaporated)
2 (4.5-ounce) cans fruit cocktail (undrained)
2 eggs, beaten
1 (9-ounce) box raisins
1 pinch salt
1 or 2 teaspoons ground cinnamon
Butter Rum Sauce, recipe follows
Preheat oven to 350 degrees F.
Cube donuts into a large bowl. Pour other ingredients on top of donuts and let soak for a few minutes. Mix all ingredients together until donuts have soaked up the liquid as much as possible.
Bake for about 1 hour until center has jelled. Top with Butter Rum Sauce.
Butter Rum Sauce:
1 stick butter
1 pound box confectioners’ sugar
Rum, to taste
Melt butter and slowly stir in confectioners’ sugar. Add rum and heat until bubbly. Pour over each serving of Krispy Kreme Bread Pudding.

Recipe: Symphony Brownies (aka heaven in your mouth)

   What’s a dinner party without a chocolate treat?  I will share with you a recipe that will leave your guests IN LOVE WITH YOU!!!  It’s called the Symphony Brownie.  I first tried these decadent brownies at my cousin’s house in Montreal.  She said the secret ingredient was a chocolate bar.  A chocolate bar?  And she has used pretty much every chocolate bar you could think of.  The brownies she had made for my son and I was filled with Hershey’s Milk Chocolate.  She said she has also used a Mars bar and it tuned out fabulous.  Here’s the recipe: 

Ingredients: 

1 (17.6-ounce) package brownie mix (I used Betty Crocker)
3 (6-ounce) candy bars (try Hershey Milk Chocolate, Symphony, Crunch or Mars)

½ cup walnuts or pecans

½ cup chopped toffee (I used chopped Skore Bar)

Line a 13 by 9-inch cake pan with aluminum foil and spray with vegetable oil cooking spray.Spoon in half of the brownie batter and smooth with a spatula or the back of a spoon.  Place the candy bars side by side on top of the batter. Sprinkle nuts and toffee.  Cover with the remaining batter. Bake according to package directions.  Let cool completely, and then lift from the pan using the edges of the foil. This makes it easy to cut the brownies into squares.

A scarf adds that punch of color to an everyday look.  Stylists are either tying the scarf very close to the neck or leaning it open so it layers over your top or dress.  Here’s a step by step guide on how to get that skinny scarf effect.  I know, duh! But, seriously- this technique allows a nice clean look with a bit of a flare at each end of the scarf.

R.I.P. Heath Ledger (1979-2008)

So the rumors are true. Today Heath Ledger passed away in his New York apartment.  He was found by his housekeeper and masseuse passed out on the floor.  There is no real answer as to how he died.  His death may have been caused by a drug over dose.  His popularity rose after playing a gay cowboy in the movie Brokeback Mountain.  R.I.P.

Paula Deen’s Chocolate Cheese Fudge (featured on Ellen)

Ingredients:

1/2 pound Velveeta cheese, sliced
1 cup butter
1 teaspoon pure vanilla extract
1 cup chopped nuts, pecans, walnuts
2 (16-ounce) boxes confectioners’ sugar
1/2 cup cocoa powder
 

caramel for dipping

white chocolate for dipping

chopped peanuts or pecans 

thick bbq sticks
